chore: bump version to v3.0.1

Versions set with `node scripts/set-version.js 3.0.1`, which covers
package.json, tauri.conf.json and Cargo.toml. Two files it does not touch,
updated alongside:

- frontend/src-tauri/Cargo.lock — regenerated by cargo, as the script's own
  closing note instructs ("run pnpm install or cargo build to update
  lockfiles"). It carries the LocalLens package version and would otherwise
  disagree with Cargo.toml.
- backend/main.py APP_VERSION — the backend's own constant, which the script
  has no knowledge of. Its comment already asks that it be kept in sync with
  package.json and tauri.conf.json.

The CHANGELOG entry is not just documentation here: release.yml extracts the
section for the tagged version out of CHANGELOG.md and uses it verbatim as BOTH
the GitHub release body and the `notes` field of latest.json, which is what the
in-app UpdateChecker panel renders. Verified that the workflow's awk extraction
picks up the 3.0.1 section cleanly, and that the in-app renderer converts its
markdown correctly (bold and headings resolve, panel titles itself "What's
Fixed").
