ci: move SPM Linux job to macos-arm; refresh simulator device names

Drop the ubuntu-latest SPM job (it used the blocked setup-swift action and
now duplicates the macos SPM job on Apple Silicon). Update stale simulator
device names to ones present on the current runner.
