We have no Covariancespectrum notebook!

There is no tutorial notebook for the Covariancespectrum class! This should get fixed ASAP, but I don't feel qualified to do it myself, because I don't really work with covariance spectra. Any takers?

Excellent idea! I have my inquisition today and am on a rigorous schedule in order to submit in January, so I am going to continue to be a terrible collaborator until then 😢
