Turn the 3D scene goal table into a grouped list and promote Viam 101

Follow-up to the 3D scene restructure, as a reviewer requested: the overview's "Start from what you want to do" section is now a grouped list instead of a two-column table, closer to the reader goals it was built from.

What changed

• Goal list (docs/visualization/3d-scene/_index.md): the 14-row table becomes five groups, each ordered by how you'd do the work:
  • Set up a machine: add (Build mode) → adjust (Editing frames visually) → verify (Measuring between frames).
  • Watch and operate a machine: Monitor mode, 3D scene widgets.
  • Move an arm and debug motion: Move mode, Replay mode, a new entry for Inspect IK ("find out why a plan failed or took a surprising route"), and Visuals and collisions.
  • Check cameras and perception and Draw your own visuals: unchanged entries.
  • The troubleshooting link moves to a line after the list.
• Viam 101 card at the top of the section, using the existing course shortcode with the eyebrow "Want to try the 3D scene without hardware?". Viam 101 uses a simulated arm and gripper in the 3D scene.
• course shortcode, Markdown variant (layouts/shortcodes/course.md): it always added a colon after the eyebrow, which rendered a question-style eyebrow as "hardware?:". It now skips the colon when the eyebrow already ends in punctuation. The other uses (What is Viam?, Motion planning, Build and deploy modules) render the same as before.

How it was verified

make build-prod, prettier, markdownlint, vale, and the frontmatter check pass. Checked the rendered page in a local preview, and the Markdown mirror for all four pages that use the course shortcode.
